Cook a meal from Vanuatu! Make Fish LapLap (Coconut baked island vegetables).

For the Kumera Bake:

Grated kumera or yam

3 cups coconut milk

A big bunch of spinach

Fish:

6 fish fillets

I lemon

1 big spoon of olive oil

One tablespoon of curry powder 

Coconut Sauce:

1 tsp. coconut oil

8 cloves garlic, minced

2 tbsp. ginger, grated

1 tablespoon of cornflour

4 cups coconut milk

Preheat oven to 375 F.

Grate some kumera or yam and mix it with the 1 1/2 cups coconut milk. Spread in baking dish and bake in oven for 50 min.Squeeze lemon juice onto the fish. Place the fish in a bowl with the olive oil and curry powder. Place the fish in the oven when kumera bake has 20 minutes to go.

While the fish and kumera are cooking, start making the coconut sauce. Heat the coconut oil in a pot with the garlic and ginger. Add in the cornflour and cook for a few minutes. Add in the coconut milk and whisk. Let the sauce simmer for a few minutes and let thicken slightly.

When the fish is cooked and cooled slightly, cut into pieces.

To serve, place the spinach leaves on a plate, followed by the sweet potato/coconut milk bake, then the fish and the coconut sauce on top.
